The Maharshal (Yam Shel Shlomo, Bava Kama 4:9) rules that while, ordinarily, all laws other than idolatry, murder and licentiousness are set aside under mortal danger, one may still not falsify the Torah. Ziyuf ha-Torah is not overridden by piku’ach nefesh (https://www.torahmusings.com/2010/07/jewish-and-gentile-judges/). It is on BK 38a, and the Maharshal is bothered why the Chachamim taught the Roman that we are pattur if our ox gores an ox of a non-Jew.

Rabbi Heinemann shlit'a cited that when, a few years ago amidst all the sound and fury, he was asked why he wouldn't back down about his heter to change the temperature on a "Sabbath mode" oven on yomtov; he said he was being moser nefesh rather than commit ziyuf haTorah! (He concluded: "follow your rabbi. And if I am your rabbi, you can keep doing it.")
